Instructions
Preheat your oven to 180°C (350°F) and line a baking tray with parchment paper
In a mixing bowl, cream together the butter and sugar until light and fluffy
Add the egg and vanilla extract, then mix well
In another bowl, combine the flour and baking powder
Gradually add the dry ingredients to the wet mixture and stir until combined
Fold in the shredded coconut
Scoop small portions of dough and place them on the prepared baking tray, spacing them apart
Gently flatten each cookie with a fork or your fingers
Bake for 10 to 12 minutes or until the edges are golden
Allow the cookies to cool on a wire rack before serving
