Introduction

Mini éclairs are elegant French pastries made with light and airy choux pastry, filled with silky vanilla pastry cream, and finished with a smooth chocolate glaze. Their delicate texture and rich flavor make them perfect for celebrations, afternoon tea, or whenever you want a classic homemade dessert.

Ingredients

Choux Pastry

1/2 cup water

1/2 cup whole milk

1/2 cup unsalted butter

1 tablespoon granulated sugar

1/4 teaspoon salt

1 cup all-purpose flour

4 large eggs

Pastry Cream Filling

2 cups whole milk

1/2 cup granulated sugar

1/4 cup cornstarch

4 large egg yolks

2 tablespoons unsalted butter

2 teaspoons vanilla extract

Chocolate Glaze

1/2 cup semi-sweet chocolate chips

1/4 cup heavy cream

1 tablespoon unsalted butter

Instructions

Preheat the oven to 400°F (200°C). Line two baking trays with parchment paper.

In a medium saucepan, combine the water, milk, butter, sugar, and salt. Heat until the butter is completely melted and the mixture comes to a gentle boil.

Add the flour all at once and stir vigorously with a wooden spoon until the dough forms a smooth ball and pulls away from the sides of the pan. Continue stirring for 1 to 2 minutes to remove excess moisture.

Transfer the dough to a mixing bowl and let it cool for about 5 minutes.

Add the eggs one at a time, mixing thoroughly after each addition until the dough becomes smooth, glossy, and pipeable.

Transfer the dough to a piping bag fitted with a large round tip. Pipe small logs about 3 inches long onto the prepared baking trays, leaving space between each éclair.

Bake for 15 minutes, then reduce the oven temperature to 350°F (175°C) and continue baking for another 15 to 20 minutes until golden brown and crisp. Cool completely on a wire rack.

For the pastry cream, whisk together the sugar, cornstarch, and egg yolks in a bowl.

Heat the milk until steaming but not boiling. Slowly whisk the warm milk into the egg mixture.

Return everything to the saucepan and cook over medium heat, whisking constantly until thickened.

Remove from the heat and stir in the butter and vanilla extract. Cover with plastic wrap directly touching the surface and chill completely.

Fill a piping bag with the chilled pastry cream. Poke small holes in each éclair and pipe the cream inside until filled.

To prepare the glaze, heat the heavy cream until hot. Pour it over the chocolate chips and let it sit for 1 minute. Stir until smooth, then mix in the butter.

Dip the tops of the filled éclairs into the chocolate glaze and allow the glaze to set before serving.

Tips

Use room-temperature eggs for smoother choux pastry.

Do not open the oven during the first 20 minutes of baking.

Cool the éclairs completely before filling.

Refrigerate filled éclairs and enjoy within 2 to 3 days.
