Soft, festive cookies made with a box of white cake mix and colorful Christmas sprinkles. They’re easy to prepare and perfect for holiday gatherings!
Prep time: 10 minutes
Bake time: 9–12 minutes
Yield: About 20–24 cookies
Ingredients
- 1 box (15.25 oz / 432 g) white cake mix
- ½ cup (120 ml) vegetable oil
- 2 large eggs
- ½ teaspoon vanilla extract
- 3 tablespoons red sprinkles
- 3 tablespoons green sprinkles
- Additional sprinkles for topping, optional
Instructions
- Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper.
- Make the dough. In a large bowl, mix the cake mix, vegetable oil, eggs, and vanilla extract until combined. The dough will be thick and slightly sticky.
- Add the sprinkles. Gently fold in the red and green sprinkles. Avoid overmixing, as the colors may bleed into the dough.
- Chill if needed. If the dough is too sticky to handle, refrigerate it for 20–30 minutes.
- Shape the cookies. Scoop about 1½ tablespoons of dough per cookie and place the portions approximately 2 inches apart on the prepared baking sheets. Add a few extra sprinkles on top if desired.
- Bake for 9–12 minutes, until the edges are set and the centers still look slightly soft. Avoid overbaking to keep the cookies tender.
- Cool on the baking sheets for 5 minutes, then transfer to a wire rack to cool completely.
Tips
- Use jimmies-style sprinkles in the dough to help prevent the colors from bleeding.
- Let the baking sheets cool between batches so the cookies don’t spread too much.
- Store the cooled cookies in an airtight container at room temperature for up to 4–5 days.
