Stuffed Golden Bread Rolls

Ingredients

For the dough

  • 4 cups all-purpose flour
  • 2¼ tsp instant yeast
  • 3 tbsp sugar
  • 1 tsp salt
  • 1 cup warm milk
  • ¼ cup warm water
  • 1 large egg
  • 4 tbsp melted butter
  • 2 tbsp vegetable oil

For the filling

  • 1 lb / 450 g ground beef or ground chicken
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika
  • ½ tsp garlic powder
  • ½ tsp dried oregano
  • ½ cup shredded mozzarella or cheddar, optional
  • 1 tbsp oil

For the top

  • 1 egg yolk
  • 1 tbsp milk
  • 1 tbsp melted butter after baking

Instructions

1. Prepare the dough:
Mix warm milk, warm water, sugar, and yeast. Let stand for about 5 minutes. Add the egg, melted butter, oil, and salt. Gradually add the flour and knead for 8–10 minutes until the dough is smooth and soft.

Place in a lightly greased bowl, cover, and let rise for 1 hour, or until doubled in size.

2. Make the filling:
Heat the oil in a skillet. Add the onion and cook until soft. Add garlic and ground meat. Cook while breaking the meat into small pieces.

Season with salt, pepper, paprika, garlic powder, and oregano. Continue cooking until the meat is fully done and most of the liquid has evaporated. Let cool completely. Mix in cheese if desired.

3. Shape the rolls:
Punch down the risen dough and divide it into about 20–24 equal pieces.

Roll each piece into a small oval or rectangle. Place 1–2 tablespoons of filling near one end, then roll it tightly into a small cylinder. Pinch the seam closed.

Arrange the rolls close together on a greased or parchment-lined baking tray.

4. Second rise:
Cover and let the shaped rolls rise for 25–30 minutes.

5. Egg wash:
Mix the egg yolk with 1 tablespoon milk and gently brush the tops.

6. Bake:
Bake at 375°F / 190°C for about 20–25 minutes, until beautifully golden brown.

7. Finish:
Brush the hot rolls with melted butter as soon as they come out of the oven. Cover loosely with a clean towel for 5–10 minutes to keep them extra soft.

Serving

Serve warm as a snack, party appetizer, lunchbox treat, or with soup and salad.

Tip: For very soft bakery-style rolls, avoid adding too much flour—the dough should stay slightly soft and elastic.
