Ingredients
Mushrooms
- 450 g (1 lb) fresh blue oyster mushroom clusters
- 2 tbsp olive oil
- 2 tbsp unsalted butter
- 3–4 garlic cloves, finely minced or smashed
- 1 tsp fresh thyme leaves
- ½ tsp salt
- ½ tsp black pepper
- 1 tsp smoked paprika — optional
- 1 tbsp lemon juice
- 1 tsp lemon zest
- 1–2 tbsp chopped fresh parsley
Optional finishing sauce
- 1 tbsp soy sauce
- 1 tsp honey or maple syrup
- 1 tsp sesame oil
- ½ tsp chili flakes
1. Prepare the mushrooms
Trim only the dirty/substrate end of the cluster. Keep the cluster together rather than separating all the caps.
If they need cleaning, brush them or rinse very briefly, then dry them thoroughly. Excess surface water makes browning more difficult. Know The Spore
2. Heat the pan
Use a heavy cast-iron or stainless-steel skillet.
Heat 2 tbsp olive oil over medium-high/high heat until very hot.
3. Sear the cluster
Place the mushroom cluster stem-side down in the pan.
Put another heavy pan, skillet, or heatproof pot on top and press down gently. This gives the mushroom a steak-like crispy surface.
Cook for about 4–6 minutes, pressing occasionally, until deeply browned.
Flip the cluster and cook another 3–5 minutes. Blue oyster clusters tolerate high heat well and work particularly well with hard searing. Know The Spore+1
4. Add the garlic butter
Reduce heat to medium.
Add:
- 2 tbsp butter
- garlic
- thyme
- black pepper
- smoked paprika, if using
Tilt the pan and spoon the melted garlic butter repeatedly over the mushrooms for 1–2 minutes.
5. Finish
Remove from the heat and squeeze over:
- 1 tbsp lemon juice
- 1 tsp lemon zest
- chopped parsley
Taste and add salt if needed.
🌶️ For the glossy spicy version
Mix 1 tbsp soy sauce + 1 tsp honey + 1 tsp sesame oil + chili flakes.
Brush it over the mushroom during the last 1–2 minutes of cooking. Let it caramelize slightly, but don’t add it too early or it can burn.
🍽️ Serving
Slice the cluster into wedges and serve with:
- steamed rice
- crispy potatoes
- noodles
- grilled bread
- salad
- or tacos with avocado and cilantro
Important: If these are wild-foraged mushrooms rather than commercially cultivated ones, don’t rely on the photo for identification. Only eat them if their identification has been confirmed by a qualified expert.
