Introduction
This easy casserole turns the fun flavors of walking tacos into a warm, cheesy baked dish. It’s quick to prepare, satisfying, and perfect for busy nights or casual gatherings.
Ingredients
1 ½ lbs ground beef
⅓ large onion, chopped
1 can green chilies
1 can enchilada sauce
2 oz cream cheese
1 bag Fritos corn chips
1 bag shredded cheese (cheddar or Mexican blend)
¾ cup shredded lettuce
Instructions
Preheat oven to 180°C.
In a large skillet over medium heat, cook the ground beef until browned. Drain excess fat if needed.
Add chopped onion and cook for about 3 to 4 minutes until softened.
Stir in green chilies and enchilada sauce. Mix well and let it simmer for 5 minutes.
Add cream cheese and stir until melted and fully combined into the mixture.
Lightly crush the Fritos and spread half of them in the bottom of a baking dish.
Pour the beef mixture evenly over the chips.
Sprinkle shredded cheese generously over the top.
Bake for 15 to 20 minutes until the cheese is melted and bubbly.
Remove from oven and top with remaining Fritos and shredded lettuce.
Serve warm.
Tips
Add sliced olives, diced tomatoes, or jalapeños for extra flavor.
Swap ground beef for ground chicken or turkey if preferred.
Serve with sour cream or salsa on the side for added richness.
