Pastry Cream Secret Recipe
Ingredients
1 liter milk
5 tablespoons cornstarch
4 egg yolks
120 g sugar
1 tablespoon vanilla extract or 1 vanilla bean
30 g butter
Instructions
In a saucepan, heat the milk with the vanilla until it is warm but not boiling
In a separate bowl, whisk the egg yolks with the sugar until the mixture becomes pale and slightly thick
Add the cornstarch and mix well until smooth
Slowly pour the warm milk into the egg mixture while whisking continuously
Return the mixture to the saucepan and cook over medium heat, stirring constantly
Keep stirring until the cream thickens and starts to bubble
Remove from heat and add the butter, mixing until fully incorporated
Pour the pastry cream into a bowl and cover the surface with plastic wrap to prevent a skin from forming
Let it cool completely before using
Tips
Always stir continuously to avoid lumps
If lumps appear, whisk vigorously or strain the cream
Chill before using for best texture
