2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
2 teaspoons ground cinnamon
1/2 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/2 cup milk
For the apple filling
2 cups apples, peeled and chopped
2 tablespoons sugar
1 teaspoon cinnamon
For the glaze
1/2 cup powdered sugar
1 to 2 tablespoons milk
Instructions
Preheat your oven to 180°C (350°F) and grease a loaf pan
In a bowl, mix chopped apples with sugar and cinnamon, then set aside
In another bowl, whisk together flour, baking powder, salt, and cinnamon
In a separate large bowl, beat butter and sugar until light and creamy
Add eggs one at a time, then mix in vanilla extract
Gradually add dry ingredients to the wet mixture, alternating with milk, and mix until smooth
Pour half of the batter into the prepared pan
Add half of the apple mixture on top and gently swirl
Pour the remaining batter, then top with the rest of the apples and swirl again
Bake for 50 to 60 minutes or until a toothpick inserted in the center comes out clean
Let the bread cool in the pan for 15 minutes, then transfer to a rack
Mix powdered sugar with milk to make a glaze and drizzle over the cooled bread
Tips
Use firm apples like Granny Smith or Fuji for best texture
Do not overmix the batter to keep the bread soft
Let the bread cool before glazing to avoid melting
Enjoy your homemade apple fritter bread with a soft, moist texture and sweet cinnamon flavor
