CHICKEN & STUFFING BALLS WITH CREAMY GRAVY

INGREDIENTS

For the Chicken Stuffing Balls

  • 1 lb (450 g) ground chicken (or turkey)
  • 1 box (6 oz / 170 g) stuffing mix (chicken or herb flavor)
  • 1 cup hot chicken broth
  • 1 large egg
  • ½ cup finely chopped celery
  • ½ cup finely chopped onion
  • 2 cloves garlic, minced
  • 2 tbsp fresh parsley (or 1 tsp dried)
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp poultry seasoning
  • ½ tsp paprika
  • 2 tbsp olive oil or butter (for browning)

For the Creamy Gravy

  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1½ cups chicken broth
  • ½ cup milk or cream
  • Salt & pepper, to taste
  • Optional: splash of soy sauce or Worcestershire for depth

INSTRUCTIONS

** Prepare the Stuffing**

  • Place stuffing mix in a large bowl
  • Pour hot chicken broth over it
  • Cover and let sit 5 minutes, then fluff with a fork

** Make the Chicken Mixture**

  • Add to the stuffing:
  • Ground chicken
  • Egg
  • Celery
  • Onion
  • Garlic
  • Parsley
  • All seasonings
  • Mix gently until combined (don’t overmix)

** Shape the Balls**

  • Scoop mixture and roll into golf-ball sized balls
  • You should get 10–14 balls

** Brown the Balls**

  • Heat oil or butter in a large skillet over medium heat
  • Brown balls on all sides (about 6–8 minutes total)
  • Transfer to a baking dish

** Bake**

  • Preheat oven to 375°F (190°C)
  • Bake uncovered for 15–20 minutes, until cooked through

GRAVY TIME (the best part!)

  1. In the same skillet, melt butter
  2. Whisk in flour and cook 1 minute
  3. Slowly add chicken broth, whisking constantly
  4. Add milk/cream
  5. Simmer until thick and smooth
  6. Season to taste

TO SERVE

  • Spoon warm gravy generously over the chicken balls
  • Garnish with parsley if you want to be fancy

TIPS & VARIATIONS

  • Extra juicy: Add ¼ cup sour cream to the mixture
  • Cheesy version: Mix in ½ cup shredded mozzarella or cheddar
  • Air fryer: 370°F (188°C) for 12–14 minutes
