Fluffy Flourless Pancakes Recipe
Ingredients:
- 4 large eggs
- 1 cup almond flour
- 1/2 cup Greek yogurt (plain or vanilla)
- 1/4 cup milk (any kind; you can use almond milk for a dairy-free version)
- 2 tablespoons honey or maple syrup
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- Butter or oil for cooking
Optional Add-ins:
- 1/2 teaspoon ground cinnamon
- 1/4 cup blueberries or chocolate chips
Instructions:
- Prepare the Batter:
- In a large mixing bowl, whisk the eggs until they are light and frothy.
- Add the almond flour, Greek yogurt, milk, honey (or maple syrup), vanilla extract, baking powder, and salt. Mix until well combined. If you’re using any optional add-ins like cinnamon, blueberries, or chocolate chips, fold them into the batter.
- Heat the Pan:
- Heat a non-stick skillet or griddle over medium heat. Add a small amount of butter or oil and allow it to melt and coat the pan.
- Cook the Pancakes:
- Pour about 1/4 cup of batter per pancake onto the hot skillet. Use the back of a spoon to gently spread it into a round shape if needed.
- Cook until bubbles form on the surface and the edges start to look set, about 2-3 minutes. Flip the pancake and cook for an additional 1-2 minutes, or until golden brown and cooked through.
- Serve:
- Transfer the pancakes to a plate and keep warm while you cook the remaining pancakes. Serve warm with your favorite toppings such as fresh fruit, syrup, yogurt, or a dusting of powdered sugar.
Tips:
- For Extra Fluffiness: Let the batter sit for a few minutes before cooking. This allows the almond flour to absorb the liquid and can result in a slightly fluffier texture.
- Pan Temperature: Make sure the skillet is properly preheated before adding the batter. If the pan is too hot, the pancakes might burn on the outside while staying raw inside.
- Batch Cooking: You can keep cooked pancakes warm in the oven at 200°F (93°C) while you finish cooking the rest.
Enjoy your delicious, fluffy flourless pancakes! They’re great for a satisfying breakfast or brunch.
