Spinach and Cheese Hand Pies
These savory hand pies are perfect for a quick snack or a delicious appetizer. With a flaky puff pastry crust and a creamy spinach and cheese filling, they’re sure to be a hit!
Ingredients:
- 2 sheets puff pastry, thawed
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 4 cups fresh spinach, chopped
- 1/2 cup ricotta cheese
- 1/2 cup feta cheese, crumbled
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
- 1 egg, beaten (for egg wash)
Instructions:
- Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Prepare the Filling:
- Heat the olive oil in a large skillet over medium heat.
- Add the chopped onion and sauté until softened, about 3-4 minutes.
- Add the minced garlic and cook for another minute until fragrant.
- Add the chopped spinach and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.
- In a bowl, combine the ricotta cheese, feta cheese, Parmesan cheese, and the cooled spinach mixture. Season with salt and pepper to taste.
- Assemble the Hand Pies:
- Roll out the thawed puff pastry sheets on a lightly floured surface.
- Cut each sheet into 4 equal squares (you should have 8 squares in total).
- Place a generous spoonful of the spinach and cheese mixture in the center of each square.
- Fold the squares in half diagonally to form triangles and press the edges with a fork to seal.
- Bake the Hand Pies:
- Transfer the hand pies to the prepared baking sheet.
- Brush the tops with the beaten egg for a golden finish.
- Bake in the preheated oven for 15-20 minutes, or until the pastry is puffed and golden brown.
- Serve: Allow the hand pies to cool slightly before serving.
