For the Loaf
- 2 cups (250 g) all-purpose flour
- 1½ teaspoons baking powder

- 3 oz (85 g) cream cheese, softened
- 1 cup (120 g) powdered sugar
- 1–2 tablespoons milk
- ½ teaspoon vanilla extract
- 1 teaspoon fresh orange juice
Optional Topping
- 2–3 tablespoons dried cranberries
- 2 tablespoons white chocolate chips or chopped white chocolate
- A little orange zest
Method
1. Prepare the Oven and Pan
Preheat the oven to 350°F (175°C).
Grease a 9 × 5-inch loaf pan and line it with parchment paper, leaving some overhang on the sides for easy removal.
2. Prepare the Cranberries
If using fresh cranberries, wash and dry them well. Cut larger berries in half.
Toss the cranberries with 1 tablespoon of flour. This helps distribute them throughout the batter instead of allowing them to sink to the bottom.
If using dried cranberries, you can soak them in warm orange juice for about 10 minutes, then drain and pat them dry. (old fashioned recipes)
3. Make the Cream Cheese Filling
Beat the softened cream cheese and sugar until smooth.
Add the egg yolk, vanilla and flour. Mix until creamy and completely combined.

4. Make the Loaf Batter

5. Add the Cranberries
Gently fold the flour-coated cranberries into the batter using a spatula.
6. Assemble the Loaf
Spread approximately half of the batter into the prepared loaf pan.
Spoon the cream cheese filling down the center and gently spread it, keeping it slightly away from the edges.
Cover with the remaining cranberry batter and smooth the top.

7. Bake
Bake for approximately 60–75 minutes, depending on your oven.
Begin checking around 60 minutes. If the top becomes too golden before the center is fully baked, loosely cover the loaf with aluminum foil.
The loaf is ready when a toothpick inserted into the cake portion comes out clean or with a few moist crumbs.
8. Cool Completely
Allow the loaf to cool in the pan for 15–20 minutes.

Beat the softened cream cheese until smooth.
Gradually add the powdered sugar.
