Ingredients
For the Pie Crust
- 1 ½ cups all-purpose flour
- ½ cup unsalted butter, cold and cubed
- ¼ cup granulated sugar
- 1 egg yolk
- 2–3 tablespoons cold water
- ¼ teaspoon salt
For the Lemon Filling
- 1 cup granulated sugar
- ¼ cup cornstarch
- ¼ teaspoon salt
- 1 ½ cups water
- 4 large egg yolks
- ½ cup fresh lemon juice
- 1 tablespoon lemon zest
- 2 tablespoons unsalted butter
For the Meringue
- 4 large egg whites, at room temperature
- ½ cup granulated sugar
- ½ teaspoon cream of tartar
- 1 teaspoon vanilla extract
Instructions
- Prepare the crust by mixing the flour, sugar, and salt. Cut in the cold butter until the mixture resembles coarse crumbs.
- Add the egg yolk and cold water gradually until the dough comes together.
- Shape the dough into a disk, wrap it, and refrigerate for about 30 minutes.
- Roll out the dough and place it into a pie dish. Trim and crimp the edges.
- Prick the bottom with a fork, line with parchment paper, and add pie weights or dry beans.
- Bake at 375°F (190°C) for about 15 minutes. Remove the weights and bake for another 8–10 minutes until lightly golden. Let cool.
- To make the lemon filling, whisk together the sugar, cornstarch, and salt in a saucepan.
- Gradually add the water while whisking. Cook over medium heat until the mixture thickens and begins to bubble.
- In a separate bowl, lightly beat the egg yolks. Slowly whisk some of the hot mixture into the yolks to temper them.
- Return the egg mixture to the saucepan and cook for another 2–3 minutes, stirring constantly.
- Remove from the heat and stir in the lemon juice, lemon zest, and butter.
- Pour the warm lemon filling into the baked pie crust.
- For the meringue, beat the egg whites with cream of tartar until soft peaks form.
- Gradually add the sugar while continuing to beat until stiff, glossy peaks form. Mix in the vanilla.
- Spread the meringue over the warm lemon filling, making sure it reaches the edges of the crust.
- Bake at 350°F (175°C) for about 10–15 minutes, or until the meringue is beautifully golden brown.
- Allow the pie to cool completely before slicing.
Method
The pie is made in three stages: first, a crisp buttery pastry crust is baked until golden. A smooth lemon custard is prepared with fresh lemon juice and zest, then poured into the crust while warm. Finally, a light and fluffy meringue is spread over the lemon layer and baked until the peaks become golden brown. Chill the finished pie before serving for cleaner slices and a firmer filling.
Benefits
Lemons provide vitamin C and natural antioxidants. Eggs provide high-quality protein, while the dessert also provides carbohydrates for energy. Because this is a rich dessert containing sugar and butter, it is best enjoyed as an occasional treat as part of a balanced diet.
