1 teaspoon vanilla extract
1 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
Instructions
Preheat oven to 180°C (350°F)
Line a baking tray with parchment paper
In a bowl, cream together butter, peanut butter, sugar, and brown sugar until smooth
Add the egg and vanilla extract, mix well
In another bowl, combine flour, baking soda, and salt
Gradually add the dry ingredients to the wet mixture and mix until a dough forms
Roll the dough into small balls and place them on the baking tray
Flatten each ball with a fork to create a crisscross pattern
Bake for 10 to 12 minutes until lightly golden
Let cookies cool on the tray for a few minutes, then transfer to a rack
Method
Mix wet ingredients first, then combine with dry ingredients
Shape and flatten dough before baking
Bake until edges are set but centers remain soft
Tips
Do not overbake to keep cookies soft
Chill dough for 20 minutes if it feels too sticky
