Ingredients
1 kg beef (cut into cubes like in the image)
2 tablespoons olive oil
1 onion, chopped
3 cloves garlic, minced
3 carrots, sliced
3 potatoes, cubed
1 cup beef broth
1/2 cup water
2 tablespoons tomato paste
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon paprika
1/2 teaspoon thyme
1/2 teaspoon rosemary
1 tablespoon flour (optional, for thickening)
Instructions
Heat olive oil in a pan over medium heat. Sear the beef cubes for 3–4 minutes until browned on all sides. This step adds deep flavor.
Transfer the beef to the slow cooker. Add chopped onion, garlic, carrots, and potatoes.
In a bowl, mix beef broth, water, tomato paste, salt, pepper, paprika, thyme, and rosemary. Pour this mixture over the beef and vegetables.
Cover and cook on low for 7–8 hours or on high for 4–5 hours until the beef is very tender.
If you want a thicker sauce, mix 1 tablespoon flour with a little water, add it during the last 30 minutes, and stir well.
Taste and adjust seasoning before serving.
