Ingredients
2 to 3 pounds pork ribs (cut into sections)
1/2 cup soy sauce
1/3 cup brown sugar
1/4 cup honey
4 cloves garlic, minced
1 tablespoon fresh ginger, grated (or 1 teaspoon ground ginger)
1/4 cup ketchup
2 tablespoons rice vinegar (or apple cider vinegar)
1 tablespoon chili flakes (adjust to taste)
1 tablespoon cornstarch
2 tablespoons water
Instructions
Place the pork ribs in the slow cooker in an even layer
In a bowl, mix soy sauce, brown sugar, honey, garlic, ginger, ketchup, vinegar, and chili flakes until well combined
Pour the sauce evenly over the ribs
Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours until the meat is tender
Once cooked, remove the ribs and set aside
Pour the sauce from the slow cooker into a saucepan
Mix cornstarch with water, then add to the sauce
Simmer over medium heat until the sauce thickens
Return the ribs to the sauce or drizzle on top before serving
Serve hot with rice or vegetables
Tips
For extra flavor, sear the ribs in a pan before adding to the slow cooker
You can broil the ribs for a few minutes at the end for a caramelized finish
