Instructions
- Preheat oven
Set your oven to 175°C (350°F). Line an 8×8-inch baking pan with parchment paper for easy removal. - Make the crust
In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined.
Press the mixture firmly into the bottom of the pan. - Bake the crust
Bake for 8–10 minutes, then remove and let it cool slightly. - Prepare the filling
In a bowl, whisk together sweetened condensed milk, lemon juice, lemon zest, and egg yolks until smooth and creamy. - Bake again
Pour the filling over the crust and spread evenly.
Bake for 12–15 minutes until the center is set but still slightly soft. - Cool and chill
Let the bars cool at room temperature, then refrigerate for at least 2 hours until fully set. - Add topping
Spread whipped cream on top and sprinkle with extra lemon zest if you like. - Slice and serve
