Ingredients
- 1 large cauliflower head
- 3 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon paprika
- 1/2 teaspoon turmeric (optional, for color and flavor)
- 1/2 teaspoon cumin
- Salt and black pepper to taste
- 1/2 teaspoon chili flakes (optional)
- 2 tablespoons grated Parmesan cheese (optional)
- Fresh parsley, chopped (for garnish)
- Lemon wedges (for serving)
Instructions
- Preheat your oven to 200°C (400°F). Line a baking sheet with parchment paper.
- Remove the outer leaves from the cauliflower and trim the stem, keeping the core intact. Slice the cauliflower into thick “steaks” (about 2 cm thick).
- In a small bowl, mix olive oil, garlic, paprika, turmeric, cumin, salt, pepper, and chili flakes.
- Place the cauliflower steaks on the baking sheet and brush both sides generously with the seasoning mixture.
- Roast in the oven for 25–30 minutes, flipping halfway through, until golden brown and tender.
- Sprinkle Parmesan cheese on top during the last 5 minutes of baking (optional).
- Remove from the oven, garnish with fresh parsley, and serve with lemon wedges.
Tips
- Don’t cut the slices too thin, or they may fall apart.
- Add a drizzle of tahini or yogurt sauce for extra flavor.
