EASY LEMON 7UP CAKE
This cake is super soft, light, and full of fresh lemon flavor with a hint of sweetness from the soda. Perfect for beginners and always a crowd favorite.
Ingredients
1 box lemon cake mix
1 small box (3.4 oz) instant lemon pudding mix
4 large eggs
1 cup 7UP soda
3/4 cup vegetable oil
Optional glaze
1 cup powdered sugar
2 to 3 tablespoons lemon juice or 7UP
Instructions
Preheat your oven to 175°C (350°F). Grease and lightly flour a bundt pan or baking dish.
In a large bowl, combine the lemon cake mix and the instant pudding mix.
Add the eggs, 7UP soda, and vegetable oil.
Mix everything together using a hand mixer or whisk until smooth and well combined. Do not overmix.
Pour the batter into the prepared pan and smooth the top.
Bake for 40 to 45 minutes, or until a toothpick inserted in the center comes out clean.
Let the cake cool in the pan for about 10 to 15 minutes, then transfer to a wire rack to cool completely.
For the glaze, mix powdered sugar with lemon juice or 7UP until smooth. Drizzle over the cooled cake.
