Creamy White Bean and Herb Soup

Ingredients
2 tablespoons olive oil
1 small onion, finely chopped
2 cloves garlic, minced
2 carrots, diced
2 celery stalks, diced
3 cups cooked white beans (or 2 cans, drained and rinsed)
4 cups vegetable broth (or chicken broth)
1 teaspoon dried thyme
1 teaspoon dried oregano
1 teaspoon dried rosemary
1 bay leaf
Salt and black pepper to taste
½ cup heavy cream (or coconut milk for dairy-free)
1 tablespoon lemon juice
Fresh parsley, chopped (for garnish)
Instructions
Heat the olive oil in a large pot over medium heat. Add the onion and sauté for about 3–4 minutes until soft and translucent.
Stir in the garlic, carrots, and celery. Cook for another 5 minutes, stirring occasionally, until the vegetables begin to soften.
Add the white beans, broth, thyme, oregano, rosemary, and bay leaf. Bring to a gentle boil, then reduce the heat and let it simmer for 20–25 minutes so the flavors can blend beautifully.
Remove the bay leaf. Using an immersion blender, blend part of the soup directly in the pot to create a creamy texture while leaving some beans whole for heartiness. If using a regular blender, carefully blend about half the soup and return it to the pot.
Stir in the heavy cream and lemon juice. Simmer for another 3–5 minutes. Taste and adjust salt and pepper as needed.
Serve hot, topped with fresh parsley and an extra drizzle of olive oil if desired.
