{"id":17987,"date":"2026-10-10T17:37:01","date_gmt":"2026-10-10T17:37:01","guid":{"rendered":"https:\/\/yum.familyfreshrecipes.com\/wp\/?p=17987"},"modified":"2026-10-10T17:37:02","modified_gmt":"2026-10-10T17:37:02","slug":"slow-cooker-beef-ragu-with-pappardelle","status":"publish","type":"post","link":"https:\/\/yum.familyfreshrecipes.com\/wp\/2026\/10\/10\/slow-cooker-beef-ragu-with-pappardelle\/","title":{"rendered":"Slow Cooker Beef Ragu with Pappardelle"},"content":{"rendered":"\n<p class=\"wp-block-paragraph\">A rich, tender beef ragu cooked low and slow in a savory tomato sauce, then tossed with wide pappardelle noodles.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Ingredients<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>For the beef ragu<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>2 lb (900 g) beef chuck roast, cut into large cubes<\/li>\n\n\n\n<li>2 tbsp olive oil<\/li>\n\n\n\n<li>1 large onion, finely chopped<\/li>\n\n\n\n<li>2 carrots, finely diced<\/li>\n\n\n\n<li>2 celery stalks, finely diced<\/li>\n\n\n\n<li>4 garlic cloves, minced<\/li>\n\n\n\n<li>2 tbsp tomato paste<\/li>\n\n\n\n<li>1 can (28 oz \/ 800 g) crushed tomatoes<\/li>\n\n\n\n<li>1 cup beef broth<\/li>\n\n\n\n<li>1\/2 cup red wine, optional<\/li>\n\n\n\n<li>1 tbsp Worcestershire sauce<\/li>\n\n\n\n<li>1 tsp dried oregano<\/li>\n\n\n\n<li>1 tsp dried thyme<\/li>\n\n\n\n<li>1 tsp dried basil<\/li>\n\n\n\n<li>1\/2 tsp smoked paprika<\/li>\n\n\n\n<li>1 bay leaf<\/li>\n\n\n\n<li>1 tsp salt, or to taste<\/li>\n\n\n\n<li>1\/2 tsp black pepper<\/li>\n\n\n\n<li>1\/2 tsp red pepper flakes, optional<\/li>\n\n\n\n<li>1 tsp brown sugar, optional<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>For serving<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>12 oz (340 g) pappardelle or other wide pasta<\/li>\n\n\n\n<li>1\/2 cup grated Parmesan<\/li>\n\n\n\n<li>Fresh parsley or basil<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">Instructions<\/h3>\n\n\n\n<ol start=\"1\" class=\"wp-block-list\">\n<li>Pat the beef dry and season well with salt and black pepper. Heat olive oil in a skillet over medium-high heat and brown the beef for about 2\u20133 minutes per side. Transfer it to the slow cooker.<\/li>\n\n\n\n<li>In the same skillet, saut\u00e9 the onion, carrots and celery for 4\u20135 minutes. Add the garlic and cook for another 30 seconds.<\/li>\n\n\n\n<li>Stir in the tomato paste and cook for about 1 minute. Add the red wine, if using, and scrape up the flavorful browned bits from the pan.<\/li>\n\n\n\n<li>Transfer everything to the slow cooker. Add crushed tomatoes, beef broth, Worcestershire sauce, oregano, thyme, basil, paprika, bay leaf, pepper flakes and brown sugar.<\/li>\n\n\n\n<li>Cover and cook on <strong>LOW for 7\u20138 hours<\/strong> or <strong>HIGH for 4\u20135 hours<\/strong>, until the beef is extremely tender.<\/li>\n\n\n\n<li>Remove the beef and shred it with two forks. Discard excess fat and the bay leaf, then return the shredded beef to the sauce.<\/li>\n\n\n\n<li>If you want the sauce thicker, leave the slow cooker uncovered on HIGH for about 15\u201320 minutes.<\/li>\n\n\n\n<li>Cook the pappardelle in salted boiling water until al dente. Reserve about 1\/2 cup pasta water, then drain.<\/li>\n\n\n\n<li>Add the cooked pasta directly to the slow cooker and gently toss it through the beef ragu.
