Ingredients
Meatloaf
1 ½ pounds ground beef (80/20 for best flavor)
1 cup crushed Ritz crackers or buttery crackers
½ cup whole milk
2 large eggs
½ cup finely chopped onion
½ cup finely chopped green bell pepper
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
½ teaspoon dried thyme
½ teaspoon dried parsley
½ cup shredded sharp cheddar cheese (optional but very traditional)
Glaze
¾ cup ketchup
2 tablespoons brown sugar
1 tablespoon Worcestershire sauce
1 teaspoon yellow mustard
Preparation
Step 1
Preheat oven to 350°F (180°C). Grease a loaf pan or line it with parchment paper.
Step 2
In a large bowl, combine crushed crackers and milk. Let soak for 1 to 2 minutes until soft.
Step 3
Add eggs, onion, bell pepper, salt, black pepper, garlic powder, onion powder, paprika, thyme, parsley, and shredded cheese. Mix gently until well combined.
Step 4
Add ground beef to the mixture. Gently fold everything together using your hands or a spoon. Do not overmix or the meatloaf will be dense.
Step 5
Transfer the meat mixture into the prepared loaf pan. Press lightly to shape evenly.
Step 6
In a small bowl, mix ketchup, brown sugar, Worcestershire sauce, and mustard until smooth.
Step 7
Spread half of the glaze evenly over the top of the meatloaf.
Step 8
Bake uncovered for 40 minutes.
Step 9
Remove from oven, spread the remaining glaze on top, and return to the oven. Bake an additional 20 to 25 minutes until fully cooked and internal temperature reaches 160°F (71°C).
Step 10
Remove from oven and let rest for 10 minutes before slicing. This helps the meatloaf hold its shape.
Serving Suggestions
Serve hot with mashed potatoes, country green beans, buttered corn, or macaroni and cheese for a true Cracker Barrel–style meal.
