Savory Meatloaf with Caramelized Onion Gravy

Ingredients for the Meatloaf

1 ½ pounds ground beef 80/20 blend

1 cup breadcrumbs panko or regular

1 large onion finely chopped

2 cloves garlic minced

2 large eggs

½ cup milk

2 tablespoons ketchup

1 tablespoon Worcestershire sauce

1 teaspoon salt

½ teaspoon black pepper

1 teaspoon paprika

1 teaspoon dried thyme

1 tablespoon olive oil

Ingredients for the Caramelized Onion Gravy

2 large onions thinly sliced

2 tablespoons butter

1 tablespoon olive oil

2 tablespoons all purpose flour

2 cups beef broth

1 tablespoon Worcestershire sauce

Salt and black pepper to taste

Method

Step 1
Preheat the oven to 375°F 190°C and lightly grease a loaf pan or baking dish

Step 2
Heat olive oil in a skillet over medium heat add the chopped onion and cook until soft about 5 minutes add the garlic and cook for 30 seconds remove from heat and let cool slightly

In a large bowl combine ground beef breadcrumbs eggs milk ketchup Worcestershire sauce salt black pepper paprika thyme and the cooled onion mixture mix gently until just combined

Transfer the meat mixture to the prepared pan shape into a loaf and bake for 50 to 60 minutes until fully cooked and the internal temperature reaches 160°F 71°C

While the meatloaf bakes prepare the gravy heat butter and olive oil in a skillet over medium low heat add sliced onions and cook slowly stirring often until deep golden and caramelized about 20 minutes

Sprinkle flour over the onions stir well and cook for 1 minute gradually whisk in beef broth add Worcestershire sauce and simmer until thickened season with salt and black pepper

Remove meatloaf from the oven let rest 10 minutes then slice and serve topped with caramelized onion gravy
