
Ingredients
Base
300 g digestive biscuits or graham crackers
150 g melted butter
Cream Layer
400 g cream cheese, softened
1 cup powdered sugar
1 teaspoon vanilla extract
2 cups cold heavy whipping cream
Fruit Topping
2 cups fresh strawberries, sliced
1 cup blueberries
1 can mandarin oranges, well drained
2 cups pineapple chunks, well drained
Optional Glaze
½ cup apricot jam or fruit jelly
2 tablespoons warm water
Preparation
Crush the biscuits finely using a food processor or rolling pin
Mix the crumbs with melted butter until evenly combined
Press the mixture firmly into the bottom of foil trays or a large baking dish
Refrigerate for 20 minutes to set
In a large bowl, beat the cream cheese until smooth and creamy
Add powdered sugar and vanilla extract and beat until fully incorporated
In a separate bowl, whip the cold heavy cream until stiff peaks form
Gently fold the whipped cream into the cream cheese mixture until light and fluffy
Spread the cream mixture evenly over the chilled biscuit base
Smooth the top with a spatula
Arrange the fruit neatly on top of the cream layer
Start with strawberries, then pineapple, mandarins, and finish with blueberries
Press the fruit gently into the cream so it stays in place
Optional Glaze
Warm the jam with water until smooth
Lightly brush or drizzle over the fruit for shine
Refrigerate the dessert for at least 4 hours or overnight
Slice and serve chilled
Tips
Drain fruit very well to avoid excess liquid
Use any seasonal fruits you like
This dessert can be made a day ahead for best texture and flavor
