- 2½–3 liters water
- Optional:
- 1 tablespoon lemon juice (helps preservation & flavor)
Equipment

- Knife or kitchen scissors
- Blender or food processor (optional)
- Fine strainer or cheesecloth
- Wooden spoon
- Glass jars or bottles (sterilized)
Method (Step-by-Step)
** Clean & Prepare the Carob**
- Rinse carob pods thoroughly to remove dust.
- Cut them into small pieces (about 2–3 cm).
- Optional: remove seeds (not mandatory, but improves smoothness).
** Soak the Carob**
- Place chopped carob in a large bowl.
- Add enough water to cover completely.
- Soak for 12–24 hours at room temperature.
- This softens the pods and releases natural sugars.
** Cook the Mixture**
- Transfer soaked carob and soaking water to a large pot.
- Bring to a gentle boil.
- Lower heat and simmer 45–60 minutes, stirring occasionally.
- Water will turn dark brown and aromatic.
** Blend (Optional but Recommended)**
- Let mixture cool slightly.
- Blend until coarse or smooth (your choice).
- This extracts maximum flavor and sweetness.
** Strain the Liquid**
- Strain through cheesecloth or fine sieve.
- Press well to extract all liquid.
- Discard solids.
** Reduce into Syrup**
- Return liquid to clean pot.
- Simmer uncovered on low heat.
- Stir often to prevent sticking.
- Cook 1½–2 hours until thick and syrupy.
- Add lemon juice near the end if using.
** Cool & Store**
- Let syrup cool completely.
- Pour into sterilized glass jars or bottles.
- Store in refrigerator or cool pantry.
