Ingredients
For the Beets
- 1 kg (2.2 lbs) fresh beets
- Water (for boiling or roasting)
- ½ teaspoon salt
For the Marinade
- 3 tablespoons olive oil
- 2 tablespoons apple cider vinegar or red wine vinegar
- 1 teaspoon honey or maple syrup (optional)
- 1 small garlic clove, finely minced
- Salt, to taste

Instructions
Cook the Beets
Option A: Boiling (Classic Method)
- Wash beets well and trim stems (do not peel yet).
- Place in a pot, cover with water, add salt.
- Boil for 35–45 minutes until fork-tender.
- Drain and cool slightly. Rub skins off easily using your hands or a towel.
Option B: Roasting (More Flavorful)
- Wrap whole beets in foil.
- Roast at 200°C / 400°F for 50–60 minutes.
- Cool, peel, and slice.
Slice the Beets
- Cut into round slices (like the image), wedges, or cubes.
Make the Marinade
In a small bowl, whisk together:
- Olive oil
- Vinegar
- Honey
- Garlic
- Salt & pepper
Taste and adjust acidity or sweetness.
Assemble
- Place sliced beets in a large bowl.
- Add red onion if using.
- Pour marinade over the beets.
- Toss gently until well coated.
Chill & Serve
- Refrigerate for at least 30 minutes (even better after 2–3 hours).
