Hamburger Steak

Ingredients:

For the Hamburger Steaks:

  • 1 lb ground beef (80% lean)
  • 1/2 cup bread crumbs
  • 1/4 cup finely chopped onion
  • 1 egg
  • 1/4 cup milk
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp vegetable oil (for cooking)

For the Onion Gravy:

  • 1 large onion, thinly sliced
  • 2 tbsp butter
  • 1 cup beef broth
  • 2 tbsp all-purpose flour
  • 1 tsp Worcestershire sauce
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste

Instructions:

  1. Prepare the Hamburger Steaks:
  • In a large bowl, combine the ground beef, bread crumbs, chopped onion, egg, milk, garlic powder, onion powder, salt, and pepper.
  • Mix until just combined. Avoid over-mixing to keep the patties tender.
  • Divide the mixture into 4 equal portions and shape each into a patty about 1/2 inch thick.
  1. Cook the Hamburger Steaks:
  • Heat vegetable oil in a large skillet over medium-high heat.
  • Add the hamburger steaks and cook for about 4-5 minutes on each side, or until browned and cooked through. The internal temperature should reach 160°F (71°C).
  • Remove the patties from the skillet and set aside.
  1. Make the Onion Gravy:
  • In the same skillet, reduce heat to medium and add butter.
  • Once melted, add the sliced onions and cook, stirring occasionally, until onions are caramelized and golden brown (about 10-15 minutes).
  • Sprinkle flour over the onions and stir well, cooking for an additional 1-2 minutes to remove the raw flour taste.
  • Gradually whisk in the beef broth, Worcestershire sauce, garlic powder, and onion powder. Continue to cook, stirring frequently, until the gravy thickens (about 5 minutes). Season with salt and pepper to taste.
  1. Combine and Serve:
  • Return the hamburger steaks to the skillet, spooning some of the gravy over them.
  • Simmer for a few minutes to allow the flavors to meld together.
  • Serve the hamburger steaks hot, topped with the onion gravy.

History:

Hamburger steak has its roots in the German city of Hamburg, where the term “Hamburg steak” originally referred to a beef patty made from chopped or ground beef. German immigrants brought this culinary tradition to America in the 19th century. It evolved into the popular American hamburger we know today, but the hamburger steak, or Salisbury steak as it’s also known, is a classic American dish that remains popular.

The American version typically features a seasoned ground beef patty, often served with gravy and side dishes such as mashed potatoes or vegetables. It became a staple of American comfort food and is particularly associated with home-cooked meals and traditional diners. The addition of gravy and onions reflects the dish’s roots in hearty, rustic cooking, emphasizing rich flavors and satisfying meals.
