  • In a large bowl, beat the softened cream cheese with granulated sugar until smooth and creamy.

  • Pour the cream cheese mixture over the slightly cooled crust, spreading it evenly.
  1. Bake the Cream Cheese Layer:
  • Bake for 15-18 minutes, or until the cream cheese layer is set and slightly golden around the edges.
  • Remove from the oven and allow to cool slightly while you prepare the lemon layer.
  1. Make the Lemon Layer:
  • In another large bowl, whisk together the granulated sugar and flour.
  • Add in the eggs, lemon juice, and lemon zest (if using), and whisk until fully combined and smooth.
  • Pour the lemon mixture over the baked cream cheese layer, spreading it evenly.
  1. Bake the Lemon Layer:
  • Return the baking dish to the oven and bake for an additional 20-25 minutes, or until the lemon layer is set and slightly golden around the edges.
  • Remove from the oven and let cool completely in the baking dish.
  1. Chill and Serve:
  • Once cooled, refrigerate the bars for at least 2 hours, or until fully chilled and firm.
  • Use the parchment paper overhang to lift the bars out of the baking dish and transfer to a cutting board.
  • Dust with powdered sugar if desired, and cut into squares.
  1. Storage:
  • Store any leftover bars in an airtight container in the refrigerator for up to 5 days.
