Ingredients
- 3 large potatoes, peeled and grated
- 1 onion, finely chopped
- 1 carrot, peeled and grated

Instructions
- Preheat Oven: Preheat your oven to 180°C (350°F).
- Prep the Vegetables: Peel and grate the potatoes and carrot. Finely chop the onion and pepper.
- Sauté the Veggies: Heat a bit of olive oil in a large skillet over medium heat. Add the onion, grated carrot, and chopped pepper. Sauté until they are softened and fragrant. Season with salt to taste.
- Mix the Batter: In a large mixing bowl, whisk together the eggs and milk until well combined. Gradually add the wholemeal flour and baking powder, whisking until the batter is smooth.
- Combine: Add the grated potatoes, sautéed veggies, and chopped chives to the batter. Mix well to ensure everything is evenly distributed.
- Prepare the Baking Dish: Lightly grease a baking dish with olive oil. Pour the mixture into the dish, spreading it out evenly.
- Top with Cheese: Sprinkle the grated cheese over the top of the mixture.
- Bake: Place the baking dish in the preheated oven and bake for 40-45 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
