Ingredients:

  • 4 cups chopped fresh spinach
  • 2 cups cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup crumbled feta cheese
  • 1/2 cup sliced black olives
  • 1/4 cup chopped fresh parsley

For the Dressing:

  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon lemon juice
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey or maple syrup
  • 1 garlic clove, minced
  • Salt and pepper to taste

Instructions:

  1. Prepare the Salad:
    • In a large bowl, combine the chopped spinach, cherry tomatoes, diced cucumber, thinly sliced red onion, crumbled feta cheese, sliced black olives, and chopped parsley.
  2. Make the Dressing:
    • In a small bowl or jar, whisk together the olive oil, red wine vinegar, lemon juice, Dijon mustard, honey or maple syrup, minced garlic, salt, and pepper until well combined.
  3. Combine and Chill:
    • Pour the dressing over the salad and toss to coat all the ingredients evenly.
    • Cover the bowl with plastic wrap or a lid and refrigerate for at least 2 hours or overnight.
  4. Serve:
    • Before serving, give the salad a good toss to redistribute the dressing. Adjust seasoning with additional salt and pepper if needed.
