Flavor-Packed Overnight Salad
Ingredients:
- 4 cups chopped fresh spinach
- 2 cups cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1/2 cup crumbled feta cheese
- 1/2 cup sliced black olives
- 1/4 cup chopped fresh parsley
For the Dressing:
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 tablespoon lemon juice
- 1 tablespoon Dijon mustard
- 1 tablespoon honey or maple syrup
- 1 garlic clove, minced
- Salt and pepper to taste
Instructions:
- Prepare the Salad:
- In a large bowl, combine the chopped spinach, cherry tomatoes, diced cucumber, thinly sliced red onion, crumbled feta cheese, sliced black olives, and chopped parsley.
- Make the Dressing:
- In a small bowl or jar, whisk together the olive oil, red wine vinegar, lemon juice, Dijon mustard, honey or maple syrup, minced garlic, salt, and pepper until well combined.
- Combine and Chill:
- Pour the dressing over the salad and toss to coat all the ingredients evenly.
- Cover the bowl with plastic wrap or a lid and refrigerate for at least 2 hours or overnight.
- Serve:
- Before serving, give the salad a good toss to redistribute the dressing. Adjust seasoning with additional salt and pepper if needed.
