Ingredients
2 cups all purpose flour
1/4 cup granulated sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
2/3 cup milk
2 eggs
1 teaspoon vanilla extract
2 tablespoons melted butter
1 1/2 cups apples peeled and finely diced
Oil for frying
Vanilla Glaze
1 cup powdered sugar
2 tablespoons milk
1/2 teaspoon vanilla extract
Instructions
Prepare the batter
In a large bowl whisk together flour, sugar, baking powder, salt, and cinnamon. In another bowl mix milk, eggs, vanilla extract, and melted butter. Pour the wet ingredients into the dry ingredients and stir until combined. Fold in the diced apples.
Heat the oil
Pour about 2 inches of oil into a deep skillet or pot. Heat the oil to about 175°C / 350°F.
Fry the fritter bites
Using a spoon or small scoop, carefully drop small portions of batter into the hot oil. Fry a few at a time for about 2 to 3 minutes, turning occasionally until golden brown and cooked through.
Drain
Remove the fritters using a slotted spoon and place them on paper towels to drain excess oil.
Prepare the glaze
In a small bowl whisk powdered sugar, milk, and vanilla extract until smooth.
Finish the fritters
Drizzle the vanilla glaze over the warm fritter bites and allow it to slightly set before serving.
Tips
Use tart apples like Granny Smith for a balanced flavor.
Keep the oil temperature steady so the fritters cook evenly.
Serve warm for the best texture and taste.
