Bakery-Style Blueberry Streusel Muffins
Prep Time: 15 minutes
Bake Time: 20–25 minutes
Yield: 12 large muffins
Ingredients
For the muffins
2 1/2 cups all-purpose flour
1 cup granulated sugar
1/2 teaspoon salt
2 teaspoons baking powder
1/2 cup unsalted butter, melted and slightly cooled
2 large eggs
1 cup milk (room temperature)
1 teaspoon vanilla extract
1 1/2 cups fresh or frozen blueberries (do not thaw if frozen)
For the crumb topping (streusel)
1/2 cup all-purpose flour
1/3 cup granulated sugar
1/4 cup light brown sugar
1/4 teaspoon salt
1/4 cup cold unsalted butter, cubed
Instructions
- Preheat oven to 375°F (190°C). Line a 12-cup muffin pan with tulip-style liners like in the picture, or regular liners.
- Make the streusel topping.
In a small bowl, mix flour, granulated sugar, brown sugar, and salt. Add cold butter cubes and use your fingers or a fork to rub it in until crumbly. Place in the fridge while you prepare the batter. - Prepare dry ingredients.
In a large bowl, whisk together flour, sugar, salt, and baking powder. - Mix wet ingredients.
In another bowl, whisk melted butter, eggs, milk, and vanilla until smooth. - Combine.
Pour wet ingredients into dry ingredients and gently mix just until combined. Do not overmix — the batter should be slightly lumpy. - Fold in blueberries.
Gently fold blueberries into the batter. - Fill muffin cups.
Divide batter evenly, filling each liner almost to the top for that bakery-style height. - Add streusel.
Generously sprinkle the crumb topping over each muffin, gently pressing it down slightly. - Bake.
Bake for 20–25 minutes, or until tops are golden and a toothpick inserted in the center comes out clean. - Cool.
Let muffins cool in the pan for 5 minutes, then transfer to a wire rack.
Tips for Extra Bakery-Style Muffins
- Sprinkle a little coarse sugar on top before baking for sparkle.
- Start baking at 400°F (200°C) for 5 minutes, then reduce to 375°F — this helps create taller domes.
- Toss blueberries in 1 tablespoon flour before folding in to prevent sinking.
They’re soft, fluffy, buttery, and packed with juicy blueberries with that irresistible crunchy topping.
If you’d like, I can also give you a lemon version or chocolate chip version.
