Pickled Beets (Homemade Style)

If you love that perfect balance of sweet, tangy, and earthy flavor, homemade pickled beets are a must. They’re vibrant, refreshing, and incredibly easy to make with simple pantry ingredients. Perfect as a side dish, salad topping, or even straight from the jar.

Ingredients

6–8 medium beets
1 cup white vinegar
1/2 cup sugar
1/2 cup water
1 teaspoon salt

Optional additions for extra flavor
1/2 teaspoon whole black peppercorns
2–3 whole cloves
1 small cinnamon stick
A few thin slices of onion

Instructions

Step 1: Prepare the beets
Wash the beets thoroughly to remove any dirt. Trim off the tops and roots, but leave a little stem to prevent bleeding while cooking.

Step 2: Cook the beets
Place the beets in a large pot and cover with water. Bring to a boil, then reduce heat and simmer for 30–45 minutes, or until fork tender. Cooking time depends on the size of the beets.

Step 3: Cool and peel
Drain the beets and let them cool until safe to handle. The skins should slide off easily with your fingers or a paper towel. Slice or cube them to your desired thickness.

Step 4: Make the pickling liquid
In a saucepan, combine vinegar, sugar, water, and salt. Heat over medium, stirring until the sugar dissolves completely. If using spices, add them now and let the mixture simmer for 2–3 minutes.

Step 5: Pack the jars
Place sliced beets into clean glass jars. Pour the hot pickling liquid over the beets, making sure they are fully covered.

Step 6: Cool and refrigerate
Let the jars cool to room temperature, then seal and refrigerate. For best flavor, let them sit at least 24 hours before serving.

Storage

Store in the refrigerator for up to 2–3 weeks. Always use a clean utensil when serving to keep them fresh longer.

Serving Ideas

Add to green salads for a pop of color and flavor.
Serve alongside roasted meats or grilled chicken.
Chop and mix into grain bowls.
Pair with goat cheese and walnuts for a simple appetizer.

Benefits of Pickled Beets

Beets are naturally rich in fiber, folate, and antioxidants. Pickling preserves them while adding a delicious tangy sweetness. They’re low in fat and can brighten up even the simplest meals.

Homemade pickled beets are simple, affordable, and taste far better than store-bought. Once you make them yourself, you may never go back.
