Fried Cornbread

Ingredients
1 cup cornmeal
½ cup all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
¼ cup chopped onion (optional)
1 large egg
1 cup milk or buttermilk
Vegetable oil, for frying

Instructions

  1. In a mixing bowl, combine cornmeal, flour, baking powder, and salt.
  2. Stir in the chopped onion (if using).
  3. Add the egg and milk (or buttermilk). Mix until you get a thick batter. It should be spoonable but not runny. Add a little more milk if needed.
  4. Heat about ¼ inch of vegetable oil in a skillet over medium heat.
  5. Scoop batter by spoonfuls and gently drop into the hot oil. Flatten slightly with the back of the spoon to form small patties.
  6. Fry for about 2–3 minutes per side, or until golden brown and crispy.
  7. Remove and drain on paper towels.

Tips
For sweeter cornbread, add 1–2 tablespoons sugar.
