Fluffy Soufflé Omelette

Ingredients
3 large eggs
2 tablespoons milk
1 tablespoon butter
1 teaspoon sugar (optional)
Pinch of salt
Pinch of vanilla (optional)

Directions
Separate the egg whites from the yolks into two bowls. Add milk, sugar, salt, and vanilla to the yolks and mix well until smooth. Beat the egg whites with a whisk or mixer until stiff peaks form. Gently fold the egg whites into the yolk mixture using a spatula with slow movements so the batter stays airy. Heat a nonstick pan on low heat and melt the butter. Pour the mixture into the pan and spread lightly. Cover the pan with a lid and cook on very low heat for 6 to 8 minutes until the bottom is golden and the top is set. Carefully fold the omelette in half. Cook for 1 more minute, then slide onto a plate and serve warm.

Tips
Cook on low heat only so it stays fluffy and does not burn. You can fill it with honey, jam, or powdered sugar if you like it sweet, or with cheese if you prefer savory.
