
Ingredients
For the fritters
2 cups all-purpose flour
1/3 cup granulated sugar
2 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
2 large eggs
3/4 cup milk
2 tablespoons melted butter
1 teaspoon vanilla extract
2 cups apples peeled and finely chopped
Vegetable oil for frying
For the glaze
1 cup powdered sugar
2 to 3 tablespoons milk
1/2 teaspoon vanilla extract
Instructions
In a large bowl mix flour, sugar, baking powder, cinnamon, nutmeg and salt. In another bowl whisk eggs, milk, melted butter and vanilla. Add the wet ingredients to the dry ingredients and mix until just combined. Fold in the chopped apples. Heat oil in a deep pan to 170 to 180°C. Drop spoonfuls of batter into the hot oil and fry until golden brown on both sides, about 2 to 3 minutes per side. Remove and drain on paper towels. To make the glaze mix powdered sugar, milk and vanilla until smooth. Drizzle glaze over warm fritters and let set before serving.
