Ingredients
4 boneless chicken breasts or thighs
2 cups mushrooms, sliced
4 cloves garlic, minced
1/3 cup honey
1/4 cup soy sauce
2 tablespoons ketchup
1 tablespoon olive oil
1 tablespoon butter
1 teaspoon black pepper
1/2 teaspoon salt
1 teaspoon dried oregano or Italian seasoning
1 tablespoon cornstarch
2 tablespoons water
Instructions
Heat olive oil and butter in a large pan over medium heat
Season chicken with salt and pepper, then sear until golden on both sides
Remove chicken and set aside
In the same pan, add mushrooms and cook until softened
Add garlic and cook for 1 minute until fragrant
In a bowl, mix honey, soy sauce, and ketchup
Pour the sauce into the pan and stir well
Return chicken to the pan and coat with the sauce
Cover and let simmer for 15 to 20 minutes until chicken is cooked through
Mix cornstarch with water, then add to the sauce
Stir until the sauce thickens and becomes glossy
Serve hot with rice, pasta, or vegetables
