Slow Cooker Garlic Butter Chicken Breasts

Ingredients (Serves 4)

  • 4 boneless, skinless chicken breasts
  • 4 tablespoons unsalted butter, cut into small pieces
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon dried Italian herbs (or a mix of oregano, basil, thyme)
  • ½ cup chicken broth (or water if preferred)
  • 1 tablespoon olive oil (optional, to sear chicken first for extra flavor)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Optional Sear for Flavor:
Heat olive oil in a skillet over medium-high heat. Sear each chicken breast for 2 minutes on each side until lightly golden. This step is optional but adds depth of flavor.
  2. Prepare Slow Cooker:
Place the chicken breasts in the slow cooker. Sprinkle salt, pepper, paprika, and Italian herbs over the top.
  3. Add Garlic and Butter:
Scatter minced garlic over the chicken, then place small butter pieces on top of each breast. The butter will melt and make a rich, flavorful sauce.
  4. Add Liquid:
Pour chicken broth around the chicken (not directly on top, so butter stays on the chicken).
  5. Cook:
  • Cover and cook on low for 4–5 hours, or until chicken reaches an internal temperature of 165°F (74°C).
  • Alternatively, cook on high for 2–3 hours.
  1. Optional Sauce:
Remove chicken and set aside. Pour the remaining liquid into a small saucepan, bring to a simmer, and reduce for 5–10 minutes to thicken slightly. Pour over chicken when serving.
  2. Serve:
Garnish with chopped fresh parsley. Serve with rice, mashed potatoes, or steamed vegetables.

Tips & Benefits

  • Extra Flavor: Add a squeeze of lemon juice before serving for a bright finish.
  • Storage: Leftover chicken can be stored in the fridge for up to 3 days.
  • Health Benefits: Chicken breasts are lean protein; garlic and herbs add antioxidants and flavor without extra calories.
