Ingredients (Serves 4)
- 4 boneless, skinless chicken breasts
- 4 tablespoons unsalted butter, cut into small pieces
- 4 cloves garlic, minced
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon dried Italian herbs (or a mix of oregano, basil, thyme)
- ½ cup chicken broth (or water if preferred)
- 1 tablespoon olive oil (optional, to sear chicken first for extra flavor)
- Fresh parsley, chopped (for garnish)
Instructions
- Optional Sear for Flavor:
Heat olive oil in a skillet over medium-high heat. Sear each chicken breast for 2 minutes on each side until lightly golden. This step is optional but adds depth of flavor.
- Prepare Slow Cooker:
Place the chicken breasts in the slow cooker. Sprinkle salt, pepper, paprika, and Italian herbs over the top.
- Add Garlic and Butter:
Scatter minced garlic over the chicken, then place small butter pieces on top of each breast. The butter will melt and make a rich, flavorful sauce.
- Add Liquid:
Pour chicken broth around the chicken (not directly on top, so butter stays on the chicken).
- Cook:
- Cover and cook on low for 4–5 hours, or until chicken reaches an internal temperature of 165°F (74°C).
- Alternatively, cook on high for 2–3 hours.
- Optional Sauce:
Remove chicken and set aside. Pour the remaining liquid into a small saucepan, bring to a simmer, and reduce for 5–10 minutes to thicken slightly. Pour over chicken when serving.
- Serve:
Garnish with chopped fresh parsley. Serve with rice, mashed potatoes, or steamed vegetables.
