Soft, moist, and packed with banana flavor, this cake is like your favorite banana bread—but richer, fluffier, and topped with a creamy, dreamy frosting. Perfect for dessert or even with your coffee.
Ingredients
For the cake
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 cup mashed ripe bananas (about 3 bananas)
1/4 cup sour cream
1 teaspoon vanilla extract
For the cream cheese frosting
8 ounces cream cheese, softened
1/4 cup unsalted butter, softened
2 cups powdered sugar
1 teaspoon vanilla extract
Instructions
Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking pan.
In a bowl, whisk together the flour, baking soda, and salt. Set aside.
In another bowl, beat the butter and sugar until light and fluffy. Add the eggs one at a time, mixing well after each.
Stir in the mashed bananas, sour cream, and vanilla extract until smooth.
Gradually add the dry ingredients to the wet mixture and mix until just combined. Do not overmix.
Pour the batter into the prepared pan and spread evenly.
Bake for 30 to 35 minutes, or until a toothpick inserted in the center comes out clean. Let the cake cool completely.
For the frosting, beat the cream cheese and butter until smooth and creamy. Add powdered sugar gradually, then mix in the vanilla extract.
Spread the frosting over the cooled cake. Slice and enjoy
Tips
Use very ripe bananas for the best flavor and sweetness
Chill the cake slightly before slicing for clean cuts
Add chopped walnuts or chocolate chips if you want extra texture
