Ingredients
For the cauliflower:
- 1 medium head cauliflower (cut into bite-size florets)
- 1 cup all-purpose flour
- 1/2 cup cornstarch
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp paprika
- Salt and black pepper to taste
- 1 cup cold water (or milk for richer taste)
- Oil for frying
Optional sauce (like in the picture):
- 1/3 cup mayonnaise
- 2 tbsp ketchup
- 1 tbsp hot sauce (adjust to taste)
- 1 tsp garlic powder
Instructions
- Prep the cauliflower
- Wash and cut the cauliflower into small florets.
- Pat dry with a paper towel.
- Make the batter
- In a bowl, mix flour, cornstarch, garlic powder, onion powder, paprika, salt, and pepper.
- Add cold water gradually and whisk until smooth (like pancake batter).
- Heat the oil
- Heat oil in a deep pan to about 180°C (350°F).
- Coat and fry
- Dip each cauliflower piece into the batter.
- Fry in batches for 4–5 minutes until golden and crispy.
- Remove and place on paper towels to drain excess oil.
- Extra crisp (optional)
- For extra crunch, fry them a second time for 1–2 minutes.
- Make the sauce
- Mix mayonnaise, ketchup, hot sauce, and garlic powder until smooth.
- Serve
- Sprinkle with chopped parsley (optional).
- Serve hot with dipping sauce.
Tips
- Add a pinch of chili flakes for heat
- Use sparkling water instead of regular water for lighter, crispier batter
- You can also bake at 220°C (425°F) for 25–30 minutes or air-fry for a healthier version
