Almond Tiramisu Cake
A delicious twist on the classic Italian dessert, this Almond Tiramisu Cake combines soft almond sponge layers with creamy mascarpone filling and a delicate coffee flavor. The almond adds a nutty richness that pairs beautifully with the traditional tiramisu taste.
Ingredients
For the Almond Cake
1 ½ cups all-purpose flour
1 cup almond flour
1 teaspoon baking powder
½ teaspoon salt
4 large eggs
¾ cup granulated sugar
½ cup unsalted butter, melted
½ cup milk
1 teaspoon vanilla extract
½ teaspoon almond extract
For the Coffee Soaking Syrup
1 cup strong brewed coffee, cooled
2 tablespoons sugar
For the Mascarpone Cream
1 cup mascarpone cheese
1 cup heavy whipping cream
½ cup powdered sugar
1 teaspoon vanilla extract
For Topping
¼ cup cocoa powder
¼ cup sliced almonds
Optional: shaved dark chocolate
Instructions
- Preheat your oven to 350°F (175°C). Grease and line two 8-inch cake pans with parchment paper.
- In a bowl, whisk together the all-purpose flour, almond flour, baking powder, and salt.
- In a separate large bowl, beat the eggs and granulated sugar until light and fluffy.
- Add the melted butter, milk, vanilla extract, and almond extract. Mix until smooth.
- Gradually add the dry ingredients into the wet ingredients and mix until just combined.
- Divide the batter evenly between the prepared cake pans.
- Bake for 22 to 25 minutes or until a toothpick inserted in the center comes out clean.
- Remove from the oven and allow the cakes to cool completely.
Prepare the Coffee Syrup
- Brew strong coffee and allow it to cool.
- Stir in the sugar until dissolved.
Make the Mascarpone Cream
- In a bowl, whip the heavy cream until soft peaks form.
- In another bowl, mix mascarpone cheese, powdered sugar, and vanilla until smooth.
- Gently fold the whipped cream into the mascarpone mixture until creamy and fluffy.
Assemble the Cake
- Place one almond cake layer on a serving plate.
- Brush or spoon half of the coffee syrup over the cake.
- Spread half of the mascarpone cream evenly on top.
- Place the second cake layer on top and soak with the remaining coffee syrup.
- Spread the remaining mascarpone cream over the top.
Finishing Touch
Dust the top with cocoa powder and sprinkle sliced almonds and optional shaved chocolate.
Chill
Refrigerate the cake for at least 2 hours before serving so the flavors blend beautifully.
