Slow Cooker Saucy Chicken

Ingredients
4–6 boneless, skinless chicken breasts
2 cups tomato sauce, marinara sauce, or salsa
3 cloves garlic, minced
1 small onion, finely chopped
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon paprika
1 teaspoon Italian seasoning (or oregano)
½ teaspoon chili flakes (optional)
1 tablespoon olive oil
Optional: ½ cup chicken broth (for thinner sauce)
Optional garnish: chopped parsley or basil

Instructions

  1. Place the chicken breasts in the slow cooker in a single layer.
  2. Season the chicken with salt, pepper, paprika, and Italian seasoning.
  3. In a bowl, mix the tomato sauce (or salsa) with garlic, onion, olive oil, and chili flakes.
  4. Pour the sauce evenly over the chicken.
  5. Cover and cook:
    Low heat: 6–7 hours
    High heat: 3–4 hours
    Chicken should be very tender and reach 165°F (74°C).
  6. For shredded chicken: remove chicken, shred with two forks, then return to the sauce and stir.
  7. Taste and adjust seasoning before serving.
