Fried Cornbread
Ingredients
1 cup cornmeal
½ cup all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
¼ cup chopped onion (optional)
1 large egg
1 cup milk or buttermilk
Vegetable oil, for frying
Instructions
- In a mixing bowl, combine cornmeal, flour, baking powder, and salt.
- Stir in the chopped onion (if using).
- Add the egg and milk (or buttermilk). Mix until you get a thick batter. It should be spoonable but not runny. Add a little more milk if needed.
- Heat about ¼ inch of vegetable oil in a skillet over medium heat.
- Scoop batter by spoonfuls and gently drop into the hot oil. Flatten slightly with the back of the spoon to form small patties.
- Fry for about 2–3 minutes per side, or until golden brown and crispy.
- Remove and drain on paper towels.

Tips
For sweeter cornbread, add 1–2 tablespoons sugar.
For extra flavor, add a pinch of cayenne or black pepper.
