There is something timeless and comforting about a bubbling dish of pork chops and rice coming straight from the oven. This hearty casserole is the kind of meal that fills the kitchen with rich, savory aromas and brings everyone to the table without needing to be called twice. Tender, juicy pork chops bake slowly over seasoned rice, allowing all the flavors to blend together into one satisfying, family-style dinner. It is simple enough for a weeknight and cozy enough for Sunday supper.
Ingredients
4 bone-in or boneless pork chops
1 cup long-grain white rice, uncooked
1 small onion, finely chopped
2 cloves garlic, minced
1 can (10.5 oz) cream of mushroom soup
1 can (10.5 oz) cream of chicken soup
1 1/2 cups chicken broth
1/2 cup milk
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon paprika
1/2 teaspoon dried thyme
1 tablespoon olive oil or melted butter
Optional: 1/2 cup sliced mushrooms or 1/2 cup shredded cheddar cheese
Instructions
Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
Heat olive oil in a skillet over medium heat. Season both sides of the pork chops with salt, pepper, and paprika. Sear them for 2 to 3 minutes per side until lightly golden. This step locks in flavor but does not need to cook them through. Remove from heat and set aside.
In a large bowl, combine the uncooked rice, chopped onion, garlic, cream of mushroom soup, cream of chicken soup, chicken broth, milk, thyme, and a small pinch of salt and pepper. Stir well until fully blended.
Pour the rice mixture evenly into the prepared baking dish. Spread it out so the rice is in an even layer.
Place the seared pork chops on top of the rice mixture. Cover the dish tightly with aluminum foil.
Bake for 1 hour to 1 hour and 15 minutes, or until the rice is tender and the pork chops are fully cooked and juicy. If needed, add a small splash of warm broth during baking if the rice looks too dry.
Remove the foil during the last 10 minutes of baking if you would like the top slightly golden. If using cheese, sprinkle it over the top at this stage and return to the oven until melted.
Let the casserole rest for 5 to 10 minutes before serving. This allows the rice to absorb the remaining moisture and makes serving easier.
Helpful Tips
For extra flavor, add sliced mushrooms or a handful of frozen peas to the rice mixture before baking.
If using thick pork chops, increase baking time slightly and check that the internal temperature reaches 145°F (63°C).
Brown rice can be used, but it will require additional liquid and a longer cooking time.
Serving Suggestions
Serve this casserole with a crisp green salad, steamed green beans, or roasted carrots. A slice of warm bread is perfect for soaking up the creamy sauce.
