INGREDIENTS
For the batter
200 g cream cheese (softened)
3 large eggs (separated)
1/2 cup sugar
1/4 cup milk
2 tablespoons butter
1 teaspoon vanilla extract
1/2 cup all-purpose flour
1 tablespoon cornstarch
1/2 teaspoon baking powder
Pinch of salt
1 teaspoon lemon juice (optional)
For topping
Powdered sugar (for dusting)
INSTRUCTIONS
- Preheat oven to 160°C (320°F).
Prepare a muffin pan or ramekins and lightly grease them. - In a saucepan over low heat, add cream cheese, milk, and butter.
Stir gently until smooth and creamy.
Remove from heat and let cool slightly. - Add egg yolks one at a time into the cheese mixture.
Mix well after each addition.
Add vanilla extract and lemon juice. - Sift together flour, cornstarch, baking powder, and salt.
Add dry ingredients into the batter and mix until smooth. - In a separate bowl, beat egg whites until foamy.
Gradually add sugar and beat until soft peaks form. - Gently fold the egg whites into the cheese batter in 3 parts.
Use a spatula and fold slowly to keep air inside. - Pour batter into prepared cups about 3/4 full.
- Place muffin pan in a larger baking tray filled halfway with hot water (water bath).
- Bake for 25–30 minutes until puffed and golden on top.
- Turn off oven and leave door slightly open for 10 minutes before removing.
- Let cool slightly and dust with powdered sugar.
METHOD
This recipe uses the soufflé method with whipped egg whites to create volume and light texture. The water bath keeps them moist and prevents cracking.
