Ingredients
2 cups fresh okra, finely chopped
1 small onion, finely chopped
2 cloves garlic, minced
2 eggs
1 cup breadcrumbs
½ cup cornmeal
½ cup all-purpose flour
½ cup grated Parmesan cheese
2 tablespoons chopped parsley
1 teaspoon paprika
1 teaspoon salt
½ teaspoon black pepper
½ teaspoon chili powder (optional)
½ teaspoon cumin
1 teaspoon baking powder
Oil for deep frying
Preparation
Wash the okra and dry it very well.
Remove the tops and chop the okra very finely.
Place chopped okra in a large bowl.
Add onion, garlic, parsley, salt, pepper, paprika, chili powder, and cumin.
Mix well until combined.
Add eggs and mix again.
Add flour, cornmeal, breadcrumbs, Parmesan cheese, and baking powder.
Mix until a thick sticky batter forms.
If mixture is too wet, add more breadcrumbs.
If too dry, add 1 tablespoon water or milk.
Shaping
Scoop small portions of mixture.
Roll into small balls using your hands.
Place on a tray until all balls are formed.
Frying
Heat oil in a deep pan to 175°C (350°F).
Carefully drop okra balls into hot oil in batches.
Fry for 3 to 4 minutes until golden brown.
Turn occasionally for even cooking.
Remove with slotted spoon.
Drain on paper towels.
Serving
Serve hot and crispy.
Garnish with parsley.
Serve with garlic sauce, ranch, or spicy mayo.
Best enjoyed fresh and crunchy.
Tips
Dry okra well to avoid slimy texture.
Do not overcrowd the pan while frying.
You can bake at 200°C (400°F) for 20 minutes for a lighter version.
Air fryer option: 190°C for 12 to 15 minutes, shaking halfway.
