
Ingredients
For the meatloaf
2 lbs (900 g) ground beef
1 cup breadcrumbs
2 large eggs
1 cup milk
1 medium onion finely chopped
3 cloves garlic minced
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon paprika
1 teaspoon dried oregano
1 teaspoon dried thyme
2 tablespoons Worcestershire sauce
1/2 cup ketchup
2 tablespoons mustard
For the glaze
1/2 cup ketchup
2 tablespoons brown sugar
1 tablespoon Worcestershire sauce
For the potatoes
2 1/2 lbs (1.1 kg) potatoes cut into chunks
3 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon paprika
1 teaspoon garlic powder
1 teaspoon dried rosemary or thyme
Instructions
Preheat oven to 180°C (350°F)
In a large bowl mix ground beef breadcrumbs eggs milk onion garlic salt pepper paprika oregano thyme Worcestershire sauce ketchup and mustard until well combined
Shape the mixture into a loaf and place it in the center of a large baking pan or foil tray
In a small bowl mix ketchup brown sugar and Worcestershire sauce then spread evenly over the meatloaf
In another bowl toss potatoes with olive oil salt pepper paprika garlic powder and rosemary
Arrange the potatoes around the meatloaf in the pan
Cover loosely with foil and bake for 45 minutes
Remove foil and bake uncovered for another 30 to 40 minutes until meatloaf is cooked through and potatoes are golden
Internal temperature of meatloaf should reach 70°C (160°F)
Let rest 10 minutes before slicing
Serving suggestion
Serve hot with extra glaze from the pan and a side of vegetables or salad
