Chocolate Fudge Sheet Cake with Chocolate Glaze and Sprinkles

Ingredients

For the cake
2 cups all purpose flour
2 cups sugar
3/4 cup unsweetened cocoa powder
2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon salt
1 cup milk
1/2 cup vegetable oil
2 large eggs
2 teaspoons vanilla extract
1 cup hot water or hot coffee

For the chocolate glaze
1 cup heavy cream
2 tablespoons butter
2 cups semi sweet chocolate chips or chopped chocolate
2 tablespoons corn syrup or honey
1 teaspoon vanilla extract

For topping
Chocolate sprinkles

Instructions

Prepare the cake
Preheat oven to 180°C (350°F). Grease and line a rectangular baking pan.
In a large bowl mix flour sugar cocoa powder baking soda baking powder and salt.
In another bowl whisk milk oil eggs and vanilla.
Add wet ingredients to dry ingredients and mix until smooth.
Pour in hot water or coffee slowly while mixing. Batter will be thin.
Pour batter into pan and bake for 30 to 35 minutes until a toothpick comes out clean.
Let cake cool completely.

Prepare the chocolate glaze
Heat cream and butter in a saucepan until hot but not boiling.
Remove from heat and add chocolate. Let sit 2 minutes then stir until smooth.
Add corn syrup and vanilla and mix well.

Assemble
Pour glaze over the cooled cake and spread evenly.
Sprinkle chocolate sprinkles on top.
Let set for 30 minutes before cutting.

Result
Very moist chocolate cake with rich chocolate topping just like the picture.
