Garlic Chicken Fried Rice

Ingredients (serves 3–4)
2 cups cooked white rice, chilled (day-old rice works best)
2 chicken breasts, diced into small bite-size pieces
2 cloves garlic, minced
2 tablespoons vegetable oil (or sesame oil for extra flavor)
1 small onion, finely chopped
1 cup mixed vegetables (peas, carrots, corn – optional but recommended)
2 large eggs, lightly beaten
3 tablespoons soy sauce (adjust to taste)
1 tablespoon oyster sauce (optional, adds depth)
1 teaspoon sesame oil
1/2 teaspoon black pepper
Salt to taste
2 green onions, sliced for garnish
Optional: chili flakes or fresh chili for heat

Instructions
Heat 1 tablespoon of oil in a large pan or wok over medium-high heat.
Add the diced chicken, season lightly with salt and pepper, and stir-fry until fully cooked and lightly golden. Remove the chicken from the pan and set aside.

In the same pan, add the remaining oil. Add the chopped onion and sauté until soft and translucent.
Add the minced garlic and stir quickly for about 30 seconds until fragrant (do not let it burn).

Push the onion and garlic to one side of the pan. Pour in the beaten eggs on the empty side and scramble gently until just set.
Mix the eggs with the onion and garlic.

Add the chilled rice, breaking up any clumps. Stir-fry for 2–3 minutes until the rice is heated through and slightly toasted.

Return the cooked chicken to the pan. Add the mixed vegetables and stir well.
Pour in the soy sauce, oyster sauce (if using), and sesame oil. Toss everything together until evenly coated and well combined.

Taste and adjust seasoning with more soy sauce, salt, or pepper if needed.
Stir-fry for another 1–2 minutes until everything is hot and flavorful.

Remove from heat and garnish with sliced green onions and optional chili flakes.

Serve hot as a complete meal on its own.
Pair with a simple cucumber salad or spring rolls for a fuller meal.
