Rich Banana Bread

Ingredients

  • ½ cup (115 g) butter, melted
  • 1 cup white sugar
  • 2 eggs, room temperature
  • 1 teaspoon vanilla extract
  • 3 very ripe bananas, mashed (about 1½ cups)
  • 1¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon (optional but recommended)
  • ¼ cup milk or buttermilk (for extra moisture)

Optional add-ins (choose one or combine):

  • ½ cup chopped walnuts or pecans
  • ½ cup chocolate chips
  • ¼ cup raisins

Instructions

  1. Preheat oven to 175°C / 350°F.
    Grease a loaf pan or line with parchment paper.
  2. In a large bowl, whisk melted butter and sugar until smooth.
  3. Add eggs, one at a time, mixing well.
    Stir in vanilla extract and mashed bananas.
  4. In a separate bowl, mix flour, baking soda, salt, and cinnamon.
  5. Gradually add dry ingredients to the wet mixture.
    Gently stir—do not overmix.
  6. Stir in milk and any optional add-ins.
  7. Pour batter into prepared pan and smooth the top.
  8. Bake for 55–65 minutes, or until a toothpick inserted in the center comes out clean.
  9. Cool in pan for 10 minutes, then transfer to a wire rack.

Tips for Extra Rich Banana Bread

  • Use very ripe bananas (lots of brown spots).
  • Sprinkle a little brown sugar on top before baking for a crusty top.
  • Brush the top with butter right after baking for shine and softness.
