Rich Banana Bread

Ingredients
- ½ cup (115 g) butter, melted
- 1 cup white sugar
- 2 eggs, room temperature
- 1 teaspoon vanilla extract
- 3 very ripe bananas, mashed (about 1½ cups)
- 1¾ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- ½ teaspoon ground cinnamon (optional but recommended)
- ¼ cup milk or buttermilk (for extra moisture)
Optional add-ins (choose one or combine):
- ½ cup chopped walnuts or pecans
- ½ cup chocolate chips
- ¼ cup raisins
Instructions
- Preheat oven to 175°C / 350°F.
Grease a loaf pan or line with parchment paper. - In a large bowl, whisk melted butter and sugar until smooth.
- Add eggs, one at a time, mixing well.
Stir in vanilla extract and mashed bananas. - In a separate bowl, mix flour, baking soda, salt, and cinnamon.
- Gradually add dry ingredients to the wet mixture.
Gently stir—do not overmix. - Stir in milk and any optional add-ins.
- Pour batter into prepared pan and smooth the top.
- Bake for 55–65 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in pan for 10 minutes, then transfer to a wire rack.
Tips for Extra Rich Banana Bread
- Use very ripe bananas (lots of brown spots).
- Sprinkle a little brown sugar on top before baking for a crusty top.
- Brush the top with butter right after baking for shine and softness.
